Do you want your kefir to be more like thick yoghurt or whipped cream?
Here is the quickest and easiest way to make your drinking kefir in to a lovely thick creamy consistency, ideal for spooning over desserts or mixing with honey and fruit powder for a delicious boost of powerful probiotics.
You will need:
- a plastic strainer and a square of muslin or a flannel coffee strainer
- a plastic spoon or spatula
- about 250 ml of kefir
If you are using a strainer, place it over a bowl and line it with the muslin. If using a cloth coffee fiter, make sure you use a jug that is deeper than the length of the filter.
Pour in the kefir and allow to drain for a couple of hours until it reaches the consistency you want.
The longer you let it drain the thicker it will get. The consistency depends on how much of the whey you drain off. If you leave it overnight you will have cream cheese! If you squeeze extra whey you can make cottage type cheese.
Once you have the consistency you want, try adding honey and fruit powder or cinnamon to use on desserts, or add some spice mix for a savoury topping on salads.
And don’t throw the clear liquid away! That is the whey and it too is full of good stuff. You can freeze it in an ice cube tray and save it for adding to other dishes.
