Ingredients

  • 1 cup sugar
  • 2 cups cherries, stoned and halved
  • 1/2 cup white wine vinegar
  • 1/2 cup Estragon wine vinegar

Instructions

  • Wash the cherries in a fruit cleanser first, before halving and pitting them.
  • Add the fruit to a bowl and add the sugar. Mix well, cover and refrigerate.
  • Leave for three days, stirring each day to combine the sugar with the fruit juice, mashing the fruit with a wooden spoon to extrude as much juice as possible.
  • After three days strain off the fruit pulp and put to one side. (Check out my fruit leather instructions on how to use this pulp to make fruit leather)
  • Add the vinegar and mix well.
  • Strain again through muslin before adding to a glass bottle.
  • Store in the fridge. It will improve in flavour over the next few days and should be ready to drink in about a week.

Cautions

Shrubs made with sugar will have high sugar levels however consider that:

  • A 350 ml can of cream soda contains 49 grams of sugar
  • A 350 glass of cherry shrub contains 16 grams of sugar

It is also possible to reduce the sugar content by using substitutes such as stevia or honey.
