Extra Thick Kefir
Do you want your kefir to be more like thick yoghurt or whipped cream?
Here is the quickest and easiest way to make your drinking kefir in to a lovely thick creamy consistency, ideal for spooning over desserts or mixing with honey and fruit powder for a delicious boost of powerful probiotics. Or make kefir cheese to spread on toast or crackers.

You will need:
- a plastic strainer
- a square of muslin or a coffee filter
- a plastic spoon or spatula
- a container

Method
Place the strainer over the container and line it with the muslin or coffee filter.
Pour in the kefir and allow to drain for a few hours in the fridge. Depending on the consistenv=cy you want this can take anything from a couple of hours to a day. The longer you leave it the thicker the kefir will become.

Note
Don’t throw the clear liquid away! That is the whey (sometimes called "liquid gold" and it too is full of good stuff. You can freeze it in an ice cube tray and save it for adding to other dishes. Or add it to your plants soil - its a great fertilizer. I will be adding more recipes using kefir whey.
