The following is a basic recipe for making crunchy muesli in your dehydrator. There are many variations that will depend on your personal taste and preferences. I would also recommend that wherever possible you use organic ingredients.
Basic Ingredients
- 6 cups organic rolled oats
- 2 cups desiccated coconut
- 1 cup sunflower seeds*
- 1 cup chopped almonds*
- 1 cup pecan nuts*
- 3 teaspoons spices (combine cinnamon, ginger, nutmeg, or allspice)
- ½ cup olive oil (or coconut, butter or canola oil)
- ½ cup honey, or any combination of honey, brown sugar, maple syrup, or agave/stevia syrup
- 5 teaspoons vanilla sugar or 2 teaspoons vanilla essence
- 2 tablespoons powdered orange or grapefruit
*You can add any combination of nuts or seeds including pistachios, sesame, chia, hazelnuts, cashews, macadamia, pumpkin seeds or unsalted peanuts
If you don’t like coconut leave it out or replace it with any combination of wheat germ bran, spelt, barley or rye flakes.
To Make
- Mix dry ingredients
- Add oil and honey
- If you want clumpy granola add two egg whites before dehydrating.
- Dehydrate at 105 – 115 for 18 hours
- Store in an airtight container
This recipe makes approximately 2.2 kilos of basic mix. I use 60 grams a serving to which I add dried fruit. It will provide approximately 36 servings.
Halve the above quantities for just over a kilo of basic mix.
To Serve
I like to add the dried fruit only when I prepare my breakfast each day as I can then vary the types of fruit I add. So my breakfast will consist of:
- 60 grams of muesli mix
- 1 tablespoon of powdered kefir
- 1 dessertspoon of dried apple skin powder
- A swizzle of honey (not too much as there is already sweetener in the basic mix!)
- Fresh milk
Tip: Add apple peel powder to improve joint mobility.
